Sheep-free Shepherd's Pie

Another winter warmer, this time a savoury treat without any meat!

Why not add garlic to the onions and grated cheese to the mash for extra flavour?!

Ingredients:

1.5 tablespoons vegetable oil
1 onion
1 tomato
1 carrot
250g mushrooms
25g hazelnuts
2 tablespoons rissole (dried)/frozen vege mince
1 heaped tablespoon flour
75ml water
0.5 tablespoon marmite
5 potatoes
1 tablespoon margarine
2 splashes of milk

Chop the onion, tomato, carrot, mushrooms and potatoes. 

TIP: The smaller you cut the potatoes the quicker they will cook ready for the mash!

To make the vegetable bit:

Fry the vegetable oil and onion together in the frying pan for five minutes, stirring with the spatula to make sure the onion doesn't stick to the pan.
Heat the tomato, carrot and mushrooms in the small saucepan for five minutes, again stirring with the spoon.
Add the fried onion to the small saucepan once the tomato, carrot and mushrooms are cooked.
Boil 75ml of water in the kettle and pour into the mixing bowl and add the marmite, stirring as you do to make a paste.
Add the flour into the saucepan with the vegetables in and stir.
Stir in the marmite mixture slowly to the same saucepan.
Add in the hazlenuts and rissole.

To make the mash bit:

Boil enough water to cover the potatoes in the kettle, pour into the large saucepan and bring back to the boil on the hob.
Once the water is boiling, add the chopped potato and leave to cook for 10 minutes.
Check the potatoes with the fork to see if they are soft.  They should be soft enough to break when you test the with the fork but not waterlogged!  If they are not quite soft enough, leave them to continue boiling and test regularly. 
Once the potatoes are cooked, drain out the water, add the margarine and milk and, using the fork, mash the potato.

Preheat the oven to 180 degrees C. 

Spread the vegetable mixture evenly in the bottom of the oven dish.
Spread the mashed potato over the top of the vegetable mixture evenly.
 
Place in oven dish in the oven for 0.5 hour.
Ensure the pie is piping hot all the way through before serving.
